Smashed Potato Skins (Pub Grub- Year Two: Volume 12; March, 2012)
Prep time: 20 min
Cook time: 20- 25 min
Ready in: 40- 45 min
Serves: 6- 8
Ingredients:
1 lb. baby potatoes
2 T. butter- melted
Salt (to taste)
Pepper (to taste)
Garlic powder (to taste)
8 slices bacon- cooked and crumbled
1/2 c. cheddar cheese- shredded
Sour cream (for topping)
Chives- chopped (for topping)
Directions:
- Fill a medium pot with water and bring to a boil
- Meanwhile, preheat oven to 400
- Wash potatoes and toss them into the boiling water
- Continue to boil until potatoes soften, about 15 min
- Drain potatoes and transfer to a baking sheet covered with parchment paper
- Use a potato masher to press down on each potato and flatten them
- Brush melted butter over potatoes
- Sprinkle with salt, pepper, and garlic powder
- Sprinkle bacon and cheddar cheese over each potato
- Place in oven and bake until cheese is melted and bubbly, about 5-10 min
- Top each potato with a dollop of sour cream and chives, and serve
