Quiche Lorraine (Tres Français ~ Very French- Year One: Volume 9; December, 2010)


Prep time: 15 min
Cook time: 25 min
Ready in: 40 minutes
Serves: 8

Ingredients:
CRUST:
1 c.  flour
1/2 tsp.  salt
1/4 c. olive oil
1/4 c. ice (important) water

 FILLING:
3 eggs
10 oz. cream
7 oz lardons or thick cut smoked bacon- cooked and cut into small pieces
Salt
Pepper

Directions:
- Mix flour and salt with fork
- In a separate bowl, beat oil and water with whisk or fork to thicken
- Pour liquids into flour and mix with fork
- Press into 9" pie dish, poke the bottom and sides with a fork to prevent puffing during baking, and set aside
- Preheat oven to 415
- Break eggs into a bowl and beat them
- Add the lardons/ bacon and cream and mix well
- Add salt and pepper to taste
- Pour egg mixture into crust
- Bake until top of the quiche is browned, 20- 25 min
