Potato Latke (Mediterranean- Year One: Volume 5; August, 2010)

Cook: 15 min
Ready in: 30 min
Serves: 6

Ingredients:
3- 4 lbs. potatoes- peeled, grated, and placed in colander, so the juice can drain out
l med. onion- grated
1/2 tsp. salt
1/2 tsp. baking powder
1/4 tsp. pepper

2 eggs- beaten
1/4 cup flour
Apple sauce (for dipping)
Mustard (for dipping)

Directions:
- Mix potato and onion, if mixture is too wet, drain off the liquid
- Add eggs, then the dry ingredients
- Fry in vegetable oil until golden brown on one side and then turn over
- Serve with choices of apple sauce and mustard for dipping
