Gnocchi al Gorgonzola (Last Supper- Year Three: Volume 1; April, 2012)


Prep time: 20 min
Cook time: 25 min
Ready in: 45 min
Serves: 4- 6

Ingredients:
1 lb. gnocchi (fresh or frozen)
1/4 c. mild gorgonzola- crumbled
1/2 c. butter- melted
3 T. grated parmesan cheese
1/4 c. whipping cream- warmed
Pinch of pepper

Directions:
- Put gorgonzola into a bowl with butter and pepper
- Blend with a wooden spoon until creamy
- Stir in parmesan and cream
- Keep sauce warm
- Bring a large pan of salted water to a boil
- Add gnocchi carefully to boiling water
- Stir and cook briskly
- When gnocchi come to surface, remove with a slotted spoon and transfer to the bowl with the sauce
- Stir well to coat gnocchi with sauce
- Serve immediately
