Fried Mashed Potato Balls (Luck o' the Irish- Year One: Volume 12; March, 2011)


Prep time: 55 min
Cook time: 20- 30 min
Ready in: 1 hour, 15- 25 min
Serves: 6

Ingredients:
2 c. cold mashed potatoes
1 egg- lightly beaten
3/4 c.  Cheddar cheese- shredded
1/2 c.  green onions- chopped
1/4 c. real bacon bits
1/2 c. dry bread crumbs
Oil (for frying)

Directions:
- Place mashed potatoes in a bowl and let stand at room temperature for 30 min
- Stir in egg, cheese, onions, and bacon bits
- Shape into 1" balls
- Roll in bread crumbs and let stand for 15 min
- Heat 1" of oil to 375 and fry potato balls, a few at a time until golden brown, about 2 1/2 - 3 min
- Remove with a slotted spoon to paper towels to drain
- Serve warm and with ranch dressing for dipping
